Recipe(tried): Aebelskivers (Danish)

Breakfast and Brunch
Dear Betsy,

The recipe you posted sounds wonderful and I will try it. I am posting my recipe for Aebelskivers, given to me by a lovely Danish woman. It is different than the one you posted; it calls for yeast. Sometimes I add fresh whole blueberries just before cooking them.

Dissolve:
1 package yeast in
1 cup lukewarm water

Have ready:
1 cup milk (you may not use the whole cup)

Separate 4 eggs

In separate bowl, place:
2 cups sifted flour
egg yolks
1 1/2 teaspoons salt
yeast mixture

Stir and add milk until batter looks like waffle batter or thick cream. Cover and set in refrigerator overnight.

WHEN READY TO COOK:
Beat egg whites until stiff. Fold in egg whites and bake in aebelskiver pan, turning once.

Serve immediately with butter and syrup, or confectioners' sugar and lemon juice.
