Recipe: Almond Float

Almond Float

2 envelopes unflavored gelatin
1 1/2 cups evaporated milk
2 1/2 cups cold water
3/4 cup sugar
2 tsp almond flavoring
2 cans mandarin oranges

Dissolve gelatin in 6 tablespoons cold water. Combine milk, sugar, and water and heat just to boiling. Stir in dissolved gelatin and flavoring (a little at a time, so it doesn't ball up).

Pour into a 9x13 dish that has been chilled and greased. Refrigerate until set. Cut into diamond shaped pieces.

Heat 2 cups water with 1/2 cup sugar , dissolve to make a syrup, add juice from the mandarin oranges and stir. Cool.

When serving, place some syrup in a dish and "float" almond squares on top, with mandarin oranges around it.
