Hi Vicky, We live in central Ohio in Farm country and there is a large Amish community in our area. Here are two amish pumpkin pie recipes. The Amish in our area have no electricity so most of them use wood cook stoves. I gave an Amish friend my chocolate chip cookie recipe and she made them in her wood stove and they turned out perfect just like in my electric oven.No cars, just horse and buggy. I am not sure if either one is the special one you are looking for. Good Luck in your search.
Amish Pumpkin Pie
one 9" unbaked pie shell (they use lard in their crust)
1 cup pure maple syrup
1/3 tsp salt
1/4 tsp cinnamon
2 tbsp flour
1/4 tsp nutmeg
1 cup cooked pumpkin (they cook and mash their own pumpkin)
1 2/3 cup whole rich milk (their milk is straight from the cow)
Place pumpkin in a large bowl. In a separate bowl mix syrup, flour, salt and stir into the pumpkin. Add the milk and mix well. Bake at 450 for l0 min. Reduce heat and bake 25-3o min until center is firm.
Amish Pumpkin Custard Pie
1 9" unbaked pie shell
1 cup cooked pumpkin
3 eggs
1/4 cup brown sugar
1/2 cup white sugar
1/2 tsp salt
l/3 tsp ground nutmeg
1/2 tsp cinnamon
2 cups whole rich milk
In a large bowl combine pumpkin, eggs, flour, brown sugar, white sugar, salt, nutmeg, cinnamon and milk. Beat until smooth. Pour into pie shell. Bake in preheated 375 oven for 50 min or until middle is set.
