Here is another cajun slaw. You could add the eggs.
Cajun Coleslaw
Ingredients:
12 oz. Cole slaw mix (cabbage & carrots)
1 bunch chopped shallots
2 c. Seasoned boiled shrimp or crawfish tails
Dressing
3/4 c. mayonnaise
1/4 c. lemon juice
2 tsp. sugar
1 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. Tabasco sauce
1 tsp. Worcestershire
Directions:
Chop shrimp (crawfish tails) coarsely.
Mix with chopped shallots and Cole slaw. Set aside.
Place all ingredients for dressing in bowl, mix well.
Combine dressing with Cole slaw mixture. Mix well.
Add salt and pepper to taste.
Chill for an hour before serving.
Serves 6.
