I make my kabobs exactly like Barbara,MS does except that I also add wieners sliced into coins, and bacon cut into squares. The piece of bacon next to the cube of chicken gives it a really good flavor. I started making them this way when my children were real young and picky. The hot dogs were fun for them. Now, although they are now 25, 28, and 30, they won't let me make them any other way.
Maybe it's a Southern thing, but like Barbara, I use this recipe with chicken, or deer loin when I have it. People who don't know they are eating deer always think it is beef!
