We regularly make kabobs, and what I do is use whatever is handy. Sometimes I just make veggie ones to go along with some grilled chicken or fish. I like onion, zucchini, cherry tomatoes, parcooked nugget potatoes, and peppers, alternated on the "bobs", as we call them (for fun). Really, whatever you have handy, suit yourself.
It is also nice to brush them with some sauce in the last few minutes of cooking. Teriyaki sauce is sticky enuf to stay on, I find. Vinaigrette-type salad dressings work to give a bit of flavour, too.
You can marinate the meat, or do it plain, and make a dipping sauce (like peanut, for eg). Each to her own!
