Recipe: Anything Rice

Main Dishes - Rice, Grains, Pasta
ANYTHING RICE

1 tablespoon oil
1/2 onion, chopped
1/2 green bell pepper, seeded and chopped
2 eggs, lightly beaten
2 cups cooked rice
2 cups chopped cooked chicken, pork chops, hamburger, fish, shrimp
Salt and pepper, to taste

In a skillet, heat the oil and cook the onion and bell pepper for 3 minutes.

Add the eggs and cook them until they scramble.

Add the rice and meat or fish and stir until mixture is very hot.
