AUTHENTIC JAPANESE FRIED RICE
I learned this recipe from a Japanese friend of mine over 30 years ago. It's still a family favorite today.
1 lb. ground beef*
2 Tbsp. vegetable oil
6 cups fresh vegetables such as:
- Cabbage, chopped in 1-inch pieces
- Sweet onions, chopped in 1-inch pieces
- Broccoli flowerets
- Snap peas
- Green or red bell peppers
2 large carrots, shredded
1/2 cup (or more to taste) Kikkoman Soy Sauce (no substitute)
4 cups hot cooked rice
While rice is cooking, brown ground beef in oil in a large pot. Drain if necessary leaving 2 Tbsp. of oil in the pan.
Add vegetables in order given. Stir frequently until almost done.
Add soy sauce and continue cooking and stirring until desired doneness.
Stir in the hot cooked rice. Add a little more soy sauce if desired.
Serve with white bread and butter and a pitcher of iced tea. Refrigerate leftovers and use within 2 days.
*NOTE: Can substitute ground beef with leftover roast beef, pork, or chicken that has been stir fried for a few minutes. Can also substitute meat with shrimp or scrambled eggs. But ground beef is definitely the best!
