Recipe: Apple Ketchum

Misc.

I had enlisted the help of TKL last month and this is posted
on 2/15 but it is way down at the bottom so I copied it here.
It's like a crisp and it makes me go mmmmm!
'Thanks to all who helped me in my search for an apple
ketchum recipe similar to my 85 year old grandma's. Lo and
Behold, my Aunt had the recipe all along!! So here it is, I
made it yesterday and it tastes just like Grandma's used to!
Apple Ketchum
1/2 Cup butter/marg softened
1 pkg Betty Crocker yellow cake mix
1/2 Cup flaked coconut
2-1/2 cups fresh apples, peeled, sliced, cored (I found that
it took more than that to cover the mix if you cut them in
wedges) or 1 can pie sliced canned apples-well drained
(Grandma has a note here that the fresh are much better)
1/2 Cup sugar
1 tsp cin
1 Cup sour cream
2 eagg yolks or 1 egg
Heat oven to 350 degrees. Cut butter into cake mix (dry)
until crumbly, mix in coconut. Pat mixture lightly into
ungreased oblong pan, 13x9x2", building up slightly at the
edges. Bake 10 min. Arrange apple slices on warm crust.
Mix cin and sugar and sprinkle over apples. Blend sour
cream and egg and drizzle over apples (Topping will not
completely cover apples) Bake 25 min or until edges are
light brown. (Do not overbake) Serve warm. 12-15
servings.
A few notes. It is still good if overbaked a little. This dessert
is more of a messy finger food. It can be hard to cut with a
fork. Also, it is great with ice cream or whipped cream and
just as good cold.
From my house to yours...Enjoy! "
