Recipe: Apple Muffins (Oil Free)

APPLE MUFFINS

2 1/4 cups oat bran
1 tablespoon baking powder
1/4 cup packed brown sugar
1/2 cup dried apples -- diced
1 1/4 cups skim milk
2 large egg whites
2 tablespoons corn syrup

Preheat oven to 425 degrees F. Lightly grease muffin tins or use paper liners, set aside.

Mix the dry ingredients in a large bowl. Mix the milk, egg whites and corn syrup together and blend with dry ingredients.

Fill prepared muffin tins with batter divided equally. Bake 13-15 minutes. Test for doneness with a toothpick. Serve warm.
