Recipe: Apple Spinach Salad

Apple Spinach Salad
Makes 4 servings

4 cups spinach leaves (or your favorite greens)
1 1/2 Tbsp. vegetable oil
2 Tbsp. cider vinegar
1/4 tsp. salt (optional)
Pinch of sugar
1 medium tart apple, diced
1/4 cup chopped red onion
1/4 cup raisins

Wash greens thoroughly. Pat dry. Tear into bite-sized pieces; set aside in salad bowl.

In a small bowl, mix oil, vinegar, salt, and sugar. Add apple, onion and raisins to dressing and toss to coat. Cover and let stand at least 10 minutes.

Add dressing to salad bowl and toss with greens.
