APPLE WALNUT CAKE
2 cups sugar
1/2 cup margarine
2 large eggs, beaten
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
4 cups peeled, cored and thinly sliced apples
1 cup black walnuts, chopped
Whipped cream (for serving)
Preheat oven to 325 degrees F. Grease and flour a 13x9-inch baking pan.
Cream margarine and sugar in mixing bowl. Add beaten eggs and vanilla extract and whisk to blend well. Set aside.
Combine flour, baking soda, cinnamon, and salt; add to egg mixture and beat until thoroughly mixed.
Add peeled and thinly sliced apples along with the chopped walnuts to batter. Stir ONLY enough to spread apples and nuts throughout batter. Pour in the batter in prepared pan.
Bake in a 325 degree F oven for 1 hour.
Serve warm or cold with a dollop of whipped cream.
Makes 1 (13x9-inch) cake, 12 servings
