EASY FRUIT CAKE
3 eggs
1 (14-ounce) can sweetened condensed milk
1 (28-ounce) jar mincemeat
1 cup mixed candied fruit
1 cup chopped nuts
2 cups cornflake crumbs
1 teaspoon baking soda
Glazed cherries (optional)
Butter a 9-inch tube pan, line with wax paper, and butter again.
In a large bowl, beat eggs until foamy.
Add condensed milk, mincemeat, fruit and nuts; mix well. Add cornflake
crumbs and baking soda. Blend well.
Pour batter into prepared pan, spreading evenly. Bake at 300 degrees for 1
hour and 50 minutes, or until a cake tester comes out clean.
Cool in pan 5 minutes, then turn cake out of pan onto wire rack and remove
wax paper. Cool before slicing.
If desired, decorate with glazed cherries.
