Here I thought that was MY salad! I use the spring mix, or the garden mix (haven't gotten the Costco/Sam stuff, but now that you've given me the hint, I surely will)
I use sliced Granny Smith apples (or on occasion, Red Pears sliced) then sprinkle on goat cheese (I like it better than feta) then a package of the candied almond slices, some raisins and I use either a Raspberry Lite Vinaigrette dressing, or even better, if I have time, make a green apple vinaigrette, using oil and concentrated Granny Smith Apple Juice, some poppy seeds, salt/pepper and a bit of rice wine vinegar.
We're heading towards the end of Cape Cod this year - leaving at the end of the month. We had been talking about how much longer we were going to keep doing this every summer, then we ended up buying a nearly new BIG 5th wheeler with slideouts, so I guess we've committed ourselves to more seasons here. My freezer is FILLED with striped bass fillets, and chunk lobster meat to get home to FL.
We've also been talking about moving back to New England - we really miss it so much, and DH admitted this year that he's never really liked FL and wished we had not moved down there. I have mixed feelings about it because I hate winter. So, we'll see after more discussion and compromises! (On my part, usually)
Really GLAD TO SEE GINA back here again - missed you Gina!
I'm making the mustard pork chops from one of you, I think Many Hats?? not sure who posted the original recipe, but it sure smells great - our neighbor a few sites away hollered over and asked "What are you COOKING, it smells heavenly!"
