Recipe: Apricot Mustard Chicken Breasts

Apricot Mustard Chicken Breasts

1 tablespoon margarine, melted
2 tablespoons oil
8 chicken breast, skinned
1/2 cup all-purpose flour
salt to taste
1/2 cup apricot preserves
1 tablespoon dijon mustard
1/2 cup nonfat yogurt
2 tablespoons slivered almonds

Preheat oven to 375 degrees. Place the margarine and oil in large baking dish. Dredge the chicken in flour and salt and shake off excess flour. Place a single layer of chicken in prepared casserole dish. Bake at 375 degrees for 25 minutes.

Combine apricot preserves, mustard and yogurt. Spread over chicken and bake and additional 30 minutes. Top with toasted almonds.
