Recipe(tried): Autumn Supper - Autumn Chicken One-Dish Dinner
Misc. This made a nice autumn supper:
Autumn Chicken One-Dish Dinner
1/4 tsp crushed red pepper
2 TBSP chopped fresh basil or 1 tsp dried basil
1/2 tsp dried oregano leaves
2 medium zucchini
4 large plum tomatoes
3 TBSPS lemon juice
4 boneless, skinless chicken breasts
4 ears of corn
1 TBSP olive or salad oil
1/2 tsp sugar
Preheat oven to 400 degrees. Remove husks & silk from corn. With a serrated knife, cut each ear of corn crosswise into 3 pieces. Cut zucchini into 3-inch chunks. Cut each tomato lenghtwise in half. Place chicken breasts in large roasting pan; sprinkle with oregano & 1/2 tsp salt. Arrange corn & zucchini around chicken. Bake chicken & vegetables 30 minutes. Add tomatoes & bake 15 minutes more or until juices run clear when chicken is pierced with a knife & vegetables are tender. Meanwhile, in cup, with fork, mix lemon juice, olive or salad oil, basil, sugar, crushed red pepper, & 1/2 tsp salt. arrange chicken & vegetables on large platter. Brush chicken & vegetables with lemon mixture.
The original recipe called for skin & bone on chicken breasts, but I always use the boneless, skinless ones.
I served this with a lettuce salad, & fresh apple slices for dessert.
