FRESH TOMATO SAUCE WITH BASIL AND SAUSAGE
1 1/2 cups dry ziti pasta or any other short pasta
2 Italian sausage links
2 Tbsp olive oil
1 small onion, chopped
5 garlic cloves, sliced
1 Tbsp dried basil (or one handful of fresh basil)*
1 tsp crushed red pepper
1/2 tsp salt
2 cups chopped fresh Roma tomatoes
parmesan cheese and garlic bread (for serving)
Cook pasta as directed on package and set aside in large bowl.
Cook sausage; set aside and keep warm.
Heat olive oil over medium heat in pan and saute onion and garlic until translucent; about 3 minutes.
Add dried basil, crushed red pepper and salt; toss together. Add tomatoes. Slice the cooked sausage and add; cook 3-5 minutes continuing to stir until hot.
In large bowl, pour sauce over pasta.
Serve with parmesan cheese and garlic bread.
*If using fresh basil, add to the cooked pasta, not the sauce.
