Bacalhua "Z do Pipo" - Cod Fish "Z do Pipo" style.

This is one of my personal favorite tradicional portugues cod fish dishes.

Salted/dried cod fish;
Mashed potatoe;
Maoinaise;
Olive oil;
Onion and garlic;

Prepare the cod fish by leaveing it for 24 hours in water, changing the water once or twice.
Put the cod fish in a pot with milk. Boil until slightly cooked, add salt and pepper. The milk will make it soft and juicy!
Make mashed potatoe, personaly I like to add some milk, and egg, pepper and some lemon juice. MMmmmmmm!!
Chop up lots of onion in cirles and fry in pan with lots and lots of olive oil until slightly brown. Dont forget to put quite a bit of garlic as well.
Preheat oven to 220 C.
Get "oven dish" and place the cod fish in the middle. Surround it with the mashed potatoe and then cover the cod fish with the fried onion. Cover the onion with a thick layer of mayonaisse and sprinckle bread crumbs all over.
Put in oven untill nice and toasted on top.

Serve with a green wine (Vinho verde) from the north of Portugal!
