I made a spinach dip last night and it tasted exactly like the one found n Bahama breeze. However I don't know how to really describe the measurement since I did it off the top of my head.
what I used:
A little more than 1/4 cup butter
2 1/2 tablespoons all purpose flour
1/2 cup heavy (whipping) cream
About a little more than 1/4 cup mayonnaise
1 (10 ounce) box frozen chopped spinach, thawed, drained
1 cup shredded mozzarella cheese
Salt & pepper to taste
1 teaspoon ground nutmeg (add little at a time so you don't over power with nutmeg)
Melt butter in a small sauce pan you should have about half an inch in melted butter. Add the flour while stirring constantly until well mixed and no chunks are left; it should be very smooth and thick. While stirring add the heavy cream, continue to stir until well mixed.
Add thawed spinach and stir constantly so it won't stick. Add the mayonnaise and 1 cup of mozzarella or more if you like it cheesy continue to stir for about 1 minute so it won't stick the heat should be at medium. Sprinkle salt and pepper to taste, add the nutmeg a little at a time I only used about 1 teaspoon to give it the hint of nutmeg.
Now try it! I bet it taste just like Bahama breeze (if you did it correctly)
