BAKED BEANS WITH GLISTENING GLAZE
1 (1 lb.) pkg. dried marrowfat beans or great northern beans
1 tsp. salt
2 slices salt pork, cubed (1/3 cup)
2 medium onions, coarsely chopped
1/2 cup Brer Rabbits Dark Molasses
1/2 Del Monte Tomato Catsup
3/4 tsp. dry mustard
1/4 tsp. ground ginger
1 Tbsp. sugar
Wash and sort beans; place in medium saucepan with 4 cups water. Bring to boil. Turn off heat; cover and let stand 1 hour.
Add 2 cups water, bring to boil; lower heat, simmer 2 hours.
Stir in salt and 1 cup water. Turn into 3-quart casserole or bean pot.
Cook salt pork and onion. Stir in molasses, catsup, mustard and ginger; mix well. Pour over beans and stir until all beans are coated.
Bake at 350 degrees F for 1 hour. Stir beans, sprinkle with sugar and bake 30 minutes longer or until beans are tender and top is bubbly and shiny.
Makes 8 to 10 servings (8 cups)
VARIATION:
QUICK BAKED BEANS WITH GLISTENING GLAZE:
Prepare above recipe substituting 3 cans (20 oz. each) cannellini (white kidney beans) or 6 cups any other canned kernel beans, without sauce, for the dried beans. Omit 1 teaspoon salt. Prepare sauce according to above directions, using salt pork, onion, Brer Rabbit Dark Molasses, Del Monte Catsup, dry mustard and ginger. In 3-quart casserole, mix drained beans, sauce and 1/2 teaspoon salt. Sprinkle with sugar. Bake at 400 degrees F, 30 minutes or until beans are bubbly and top is shiny. Makes 8 to 10 servings (7 1/2 cups)
