Recipe: Baked Clam Appetizer (Grill or Oven)

This recipe is from a Woman's Day recipe booklet entitled Barbecues.

BAKED CLAM APPETIZER

1/4 cup fine dry bread crumbs
2 Tablespoons each grated Parmesan cheese and chopped parsley
1 clove garlic, crushed
1 Tablespoon oil
1 can (6 1/2 ounces) minced clams, undrained
Lemon wedges (optional)
Thin-sliced French bread

In small bowl mix well crumbs, cheese, parsley, garlic, and oil. Reserve and set aside 1 1/2
Tablespoons crumb mixture.

Add clams with their juice to remaining crumb mixture. Place in 1 cup grill proof casserole or small foil pan. Sprinkle with reserved crumb mixture.

Cook over medium-hot coals* 10 minutes or until bubbly.

TO SERVE:
Place on serving tray with lemon wedges and bread.

*May be baked instead in a preheated 425 degree F. oven for 15 minutes or until bubbly.
