Recipe: Hawaiian Sweet and Sour Meatballs (another good recipe for Lyn)
Appetizers and SnacksHAWAIIAN SWEET AND SOUR MEATBALLS
FOR THE MEATBALLS:
1 1/2 lb ground beef
2 eggs, beaten
1 onion, minced
4 tbsp cornstarch, divided use
1 tsp salt
1/4 tsp garlic powder or minced garlic
1/4 tsp nutmeg
ground black pepper (to taste)
2 tbsp salad oil
FOR THE SAUCE:
1 1/4 cups pineapple juice
1/2 cup brown sugar
1/3 cup water
3 tbsp vinegar
1 tbsp soy sauce
2 cups fresh pineapple chunks
2 green bell peppers, cut in bite size pieces
TO PREPARE THE MEATBALLS:
Blend together beef, eggs, onion, 1 tsp cornstarch, salt, garlic, nutmeg, and black pepper. Form into 1-inch balls.
Heat oil in skillet; brown meatballs on all sides; set aside.
TO PREPARE THE SAUCE:
In large saucepan add pineapple juice, brown sugar, water, vinegar, remaining cornstarch, and soy sauce. Cook until thickened; stir constantly.
Add meatballs, pineapple, and bell peppers. Cook 5 minutes or until fruit is well heated.
Servings: 4-6
