Recipe: Baked Halibut with Artichokes, Tomatoes and Green Onions (1980's)

BAKED HALIBUT WITH ARTICHOKES, TOMATOES AND GREEN ONIONS

1 (8 oz) jar marinated artichoke hearts, drained and chopped
2 tomatoes, peeled, seeded and chopped
1/4 cup chopped green onions
2 shallots, minced
2 tbsp. chopped fresh parsley
2 tbsp. lemon juice
2 pounds halibut steaks, (about 6 steaks, 3/4 inch thick)
Salt and pepper

Stir together first 6 ingredients until blended.

Place fish in a 9x13-inch baking pan and spoon sauce on top.

Bake at 350 degrees F for about 25 minutes or until fish flakes easily with a fork.

Makes 6 servings
