My mom used to make this for us when we were kids and we loved it. It's a modified tuna/noodle casserole with the noodles added.
TUNA NOODLE CASSEROLE WITH CHOW MEIN NOODLES
Large Pat of butter
1 small onion, chopped fine
1 stalk of celery, sliced diagonally bite size
1 large can water-packed tuna, drained and separated into chunks
1 can cream of mushroom soup
1/2 of that can filled with some milk or half and half
4 oz. of sour cream
small can of drained mushroom pieces (optional)
small can of drained water chestnuts
1/8 cup soy sauce (I use lite)
fresh ground pepper
Salt to taste (the soup and soy are salty, so you may not need any more salt)
1 small package of medium egg noodles or elbow macaroni, done to package directions
1 can of chow mein noodles
Saute onions and celery in butter, add the chunks of tuna.
Stir in soup, milk, mushrooms, water chestnuts. Let simmer slowly until bubbling all over. Add the soy, pepper, salt, and sour cream. Stir in the cooked egg noodles. Once you add the sour cream, don't let it boil or it can separate.
Then you can add about a 1/2 can of the chow mein noodles, reserving the rest to sprinkle of the top once it's plated.
Mom used to use it all on top, didn't stir any in, because she had used the cooked egg noodles.
Hope this is what you were looking for - Think maybe I'll try this again, it brings back comfort food memories!
