Recipe(tried): Baked Spanish Rice

BAKED SPANISH RICE

2 tsp. olive oil (I use vegetable oil)
1 cup diced canned tomatoes
1/2 cup onion, chopped
1/2 tsp. minced garlic
1 cup uncooked converted rice
1 (14 oz) can chicken broth
1 (4 oz) can diced green chiles
1/2 tsp. salt
1/16 tsp. oregano
1 dash red pepper

Preheat oven to 400 degrees F. Coat a cake pan with cooking spray.

Heat oil in a skillet over moderate heat. Add tomatoes, onion, and garlic. Cover and cook for 3 minutes, or until onion is soft.

Add the rice and cook for 2 minutes, stirring untill the rice is shiny and hot.

Stir in the remaining ingredients. Bring to a boil. Pour into prepared pan. Cover tightly with foil.

Bake at 400 degrees for 20 minutes. Perfect rice everytime.
