Breads - Muffins, Quick Breads
BANANA NUT BREAD

1/2 c. shortening
1 c. sugar
2 eggs, beaten
4 very ripe bananas, mashed
2 c. flour
1 tsp. soda
1 c. chopped walnuts

Blend shortening and sugar; add eggs and mashed ba-
nanas, cream well together. Add dry ingredients and use an
electric mixer in order to combine ingredients thoroughly.
Fold in nuts; bake in one large loaf pan or 2 small pans.
Each pan must be one-half full. Bake 40 minutes at 350 degrees.

You can freeze the second loaf so you will have a fresh banana nut bread loaf when you need it.
