Recipe: Banana Snack Cake

BANANA SNACK CAKE

1 cup sugar
1 cup margarine or butter, softened
2 eggs
1/2 cup buttermilk
1 cup (2 medium) mashed bananas
1 tsp vanilla
2 cups all purpose flour
1 cup quick cooking rolled oats, uncooked
1 1/2 tsp baking soda
1/2 tsp salt
6oz pkg (1cup) semi sweet chocolate chips
1/2 cup chopped nuts

Heat oven to 350 degrees F. Grease 13x9 inch pan.

In large bowl, combine sugar, margarine and eggs; mix well. Stir in buttermilk, bananas and vanilla; blend throroughly. Stir in flour, oats, baking soda and salt; mix well. Stir in chocolate chips. Spread batter in prepared pan. Sprinkle nuts evenly over top.

Bake at 350 degrees F for 30 to 35 minutes or until toothpick inserted in center comes out clean.

Makes 16 servings.
