Recipe: Barbara Bush's Chocolate Chip Cookies

BARBARA BUSH'S CHOCOLATE CHIP COOKIES

Vegetable oil for baking sheets
1 cup plus 2 tablespoons sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/3 cup firmly packed brown sugar
1/3 cup granulated sugar
1 egg
1 1/2 teaspoons very hot water
1/2 teaspoon vanilla extract
1 cup semisweet chocolate chips.

Preheat oven to 375 degrees F. Grease baking sheets.

Sift together flour, baking soda and salt onto waxed paper.

Beat butter, sugars and egg in large bowl with an electric mixer until fluffy, about 3 minutes. Beat in hot water and vanilla. Gradually beat in flour mixture until blended and smooth.

Stir in chocolate chips. Drop dough by well-rounded teaspoonfuls onto greased baking sheets.

Bake 10 minutes, or until golden. Cool on sheet on wire rack for 1 minute. Remove to wire rack to cool completely.

Yield: 3 dozen cookies.
