Recipe: Basil Chicken for Two

Basil Chicken for Two

I got this recipe on the Reynolds Aluminum Website, and made some modifications.

2 sheets (12x18-inches each) Heavy Duty Aluminum Foil
2 boneless, skinless chicken breast halves (1 to 1 1/4 lb.)
1 teaspoon dried parsley
1 teaspoon grated lemon peel
1 teaspoon dried basil
1/4 teaspoon salt
1 medium yellow squash, sliced
1/2 medium red bell pepper, cut in rings
Freshly ground pepper
(I added a zucchini, and 1/2 of a red onion)

Preheat oven to 450F or grill to medium-high.
Saute chicken in a little oil until lightly browned. May also saute peppers and other vegetables if you don't like veggies too crunchy.

Center one chicken breast half on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. ( this is about 12x18-inches.)

Combine parsley, lemon peel, basil and salt and pepper; sprinkle over veggies and stir to combine. Top chicken with vegetable mixture.

Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make two packets.

Bake 16 to 18 minutes on a cookie sheet in oven OR GRILL 20-25 minutes in covered grill.
