Recipe: Garden Fresh Bean Salad

Garden Fresh Bean Salad

1 (16 oz.) can red kidney beans, drained
1 (16 oz.) can pink kidney beans, drained
1/2 cup chopped red bell pepper
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1/4 cup sliced scallions

DRESSING:
1/2 cup extra virgin olive oil
1/4 cup (or to taste) red wine vinegar
1/4 tsp. sugar
salt and pepper to taste.

Mix beans, bell pepper, scallion, basil and parsley. Pour dressing over and mix well. Let marinate in fridge for a few hours before serving. Mix again and serve.
