Recipe: Bean Soup (using corn, tomatoes and salt pork)
SoupsBEAN SOUP
1 1/2 cups dried small white beans
Salt to taste
1/4 lb. salt pork, cut in pieces
1 medium onion, chopped
Butter or margarine
1 (16 oz.) can tomatoes
1(16 oz) can whole kernel corn, drained
Place dried beans in a large pot and cover with about 10 cups cold water; soak beans overnight.
The next day, drain beans and rinse well. Place beans in a large pot and add water (1 inch over top of beans). Add salt.
In a skillet fry salt pork and chopped onion in butter until transparent. Add to bean pot.
Bring beans to a boil; reduce the heat and simmer gently, uncovered, stirring occasionally, for 1 hour, then add can of tomatoes and continue cooking until beans are tender.
Add corn and heat only until boiling point. Take out salt pork. Ready to serve.

Hi Barb,
I looked through the Kitchen Klatter magazines that I have from the 40's and 50's and didn't find the recipe. The above recipe is one that I found on an old cd I have of recipes from community cookbooks. Maybe it's close?
