Recipe: Beef and Noodles

I don't have a recipe as such, but here is what I do. This takes a few hours to prepare.
Use a pound of good beef stew meat, cut the chunks in half if they are quite large. Brown in a dutch oven in a little canola oil, get it good and brown and add salt and pepper. Add water, about half way up the pan, put a lid on it and let simmer till meat is tender. Check every so often, if water has cooked down add more. When the meat is done, add water enough to cook the noodles. Bring broth and meat to a boil and add noodles ( I use medium or wide). Cook just like you would if the noodles were cooking just in water, until noodles are done.
Sometimes if I don't get much good brown in the pan from browning the meat, I add a package or two of au jus gravy mix along with the cold water and do it according to the package directions. This makes a rich brown broth. If I use the gravy mix I don't use any salt. Then proceed as above.
My whole family loves this. Sorry I don't have exact measurements, I've been doing it like this for more years than I care to remember, and it all depends on how many people are going to be eating it. Add a vegetable and a green salad and enjoy. IF there is any left over, you may have to add a little water to it to heat it up, the noodles soak up the broth.
