MEULLER'S MUSHROOM SAUCE
4 tablespoons olive oil
1 cup minced onions
1/2 cop minced celery
1/2 cup minced carrots
1/2 lb. sliced mushrooms
1 clove garlic
2 tablespoons flour
1/2 cup shredded ham
3 cups meat and mushroom stock*
Salt and ground black pepper (to taste)
Heat olive oil, add vegetables and garlic and cook slowly 10 minutes.
Stir in flour. Add ham and stock, season with salt and pepper to taste and stir over low fire until slightly thickened.
*To make meat and mushroom stock, cook mushroom stems with 4 cups of boiling water to which 2 bouillon cubes have been added.
VARIATION:
Instead of the ham, 6 chicken livers may be sauteed separately and added to the sauce when ready to serve.
