Recipe(tried): Beet Salad
Misc. I do this recipe with freshly roasted beets but if you drain the canned ones well, don't see any reason why it wouldn't work.
1 lb. beets, julienned
1/2 cup plain yogurt
2 Tbsp. red wine vinegar
2 Tbsp. horseradish (mild or hot, your choice)
Salt to taste
Julienne the beets. Combine rest of ingredients till smooth. Pour over the beets. Mix till combined. Serve over mesclun greens or romaine lettuce.
