Recipe: Stir-Fried Shrimp with Snow Peas

STIR-FRIED SHRIMP WITH SNOW PEAS

2 cups snow peas
2 green onions
1 (1-inch) piece fresh ginger
1 garlic clove
1 teaspoon cornstarch (or arrowroot)
2 tablespoons water
1 tablespoon vegetable oil
1 pound large shelled, deveined shrimp (fresh or frozen)
1/4 cup chicken broth
2 tablespoons soy sauce
4 cups cooked long-grain rice (for serving)

Rinse and drain snow peas; cut green onions into 1-inch pieces. Grate ginger and mince garlic. In small cup, mix cornstarch with water and set aside.

In a large nonstick skillet, heat oil over high heat. Add ginger and garlic, stir-fry 30 seconds.

Add green onions and cook 1 minute.

Add shrimp; stir-fry 1 minute.

Add snow peas, broth and soy sauce. Cook 1 to 2 minutes, until peas are bright green and shrimp is opaque.

Stir in cornstarch mixture, toss well and serve immediately over rice.
