Recipe: Benedict Omelet

"I "invented" this in a sort of panic, when we had company one afternoon. No one liked poached eggs, but were omelet lovers. It tasted wonderful!"
3 eggs
butter
a handful of cubed ham pieces - approx 1/4 x 1/4 x 1/4 inches
Hollandaise sauce
2 slices of tomato
Whisk the eggs. Melt butter in an omelet pan. When the omelet is cooked but still open in the pan, put on a handful of cubed ham pieces (I used homemade Sunday Ham pre-grilled cubed approx 1/4 x 1/4 x 1/4 inches). Covered this with some Hollandaise sauce. Put the omelet onto a plate, and fold it. Covered the omelet with more Hollandaise sauce. On top of it put 2 slices of tomato.
