Berry Muffins

Makes 8
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 cup fresh berries
1/3 cup sugar
1/2 cup milk or cream
1 egg, slightly beaten
4 Tbsp (1/2 stick or 1/4 cup) butter, melted
Preheat the oven to 400 degrees F. Either grease the muffin pans or line them with paper baking cups.
Combine the flour, baking powder, and salt in a large mixing bowl, and stir them together with a fork or wire whisk. Mash 1/2 cup of the berries with the sugar in a small bowl. Add the mashed berries, remaining whole berries, the milk or cream, egg and melted butter to the dry ingredients and stir just enough to combine the ingredients.
Spoon the batter into the muffin pans, filling the cups about three quarters full. Bake for 12 to 15 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Serve warm with butter and jam.
