Recipe: Almond Peach Muffins (using canned peaches)

ALMOND PEACH MUFFINS

1 1/2 cups all-purpose flour
1 cup sugar
3/4 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
1 (16 oz.) can peaches, well drained and chopped
1/2 cup almonds, chopped

Preheat oven to 375 degrees F and grease or paper line a muffin tin.

In a large bowl combine flour, sugar, salt and baking soda.

In another bowl beat eggs and stir in oil, vanilla and almond extracts. Stir in dry ingredients until just moistened.

Fold in peaches and almonds. Fill prepared muffin tins 3/4 full.

Bake at 375 degrees F for 20-25 minutes.

Makes 12 muffins
