Besan Burfi
(A Yellow Chickpea Flour Milk Confection)

Ingredients

2 cups grated coconut
1 cup besan (gram flour)
3 cups sugar
3 tablespoons ghee
a few cashew nuts, broken
4 cardamoms, powdered
a pinch of saffron Method

1.Heat 1 tablespoon of ghee. Add the cashew nuts and fryuntil golden. Remove the cashew nuts. To the same ghee gradually
add the besan, stirring gently. Fry on low heat until golden brown. Remove and set aside.
2.Heat 1 cup of water and add the sugar. Boil on low heat until the sugar dissolves. Increase the heat and boil briskly until a
thick syrup is obtained.
3.Add the coconut and fried besan. Stir until the mixture solidifies and starts to leave the sides of the vessel.
4.Add the rest of the ghee and saffron. Mix well and allow to cook for a couple of minutes.
5.Remove from fire, and add the nuts and cardamom powder. Mix well. Pour onto a greased plate and while still warm cut
into squares.
