I make these all the time, in fact, our seven year old granddaughter helps me roll them and dip them in sugar. This is the best recipe for sugar cookies that I have come across - they literally melt in your mouth.
BEST SUGAR COOKIES
5 cups flour
1 cup granulated sugar
1 cup powdered sugar
1 cup vegetable oil
1 cup butter or margarine, softened
2 eggs, beaten
2 teaspoons vanilla
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon salt
Combine all ingredients in a large mixer bowl. Beat on medium speed until well mixed. Chill for an hour.
Roll bits of dough into small balls (about 1/2-inch diameter). Press onto ungreased cookie sheet with the bottom of a glass dipped in sugar.
Bake at 350 degrees F for 10-12 minutes or until done but NOT brown.
Note: These also freeze very well. You can tint it with food color for holidays.
