Bibb Lettuce Salad with Okra Croutons and Buttermilk Dressing

Salad:
1 cup okra, sliced 1/4-inch thick
1 head Bibb Lettuce
1/2 cucumber
12 cherry tomatoes
1/2 cup corn flour
1/2 tsp. kosher salt
peanut oil for frying
Buttermilk Dressing:
1 Tbsp. cider vinegar
1 tsp. brown sugar
1/4 tsp.kosher salt
1/4 tsp. minced celery leaves
2 drops tobasco
1/2 c. buttermilk
1 Tbsp. finely chopped green onions
If using fresh okra, chill it for 20 minutes before dredging and frying. While okra is coming to room temperature, make the dressing by whisking the vinegar, sugar and salt. When sugar and salt are dissolved add other ingredients and whisk to blend.Set aside.
Prepare salad on 6 plates:
Rinse and dry lettuce leaves and divide them on plates. Peel cucumber and dice into 1/4 inch pieces. Rinse,stem and halve tomatoes and arrange evenly on sides of plates.
When ready to serve, place corn flour in bowl and mix with salt. Pour 1/2-inch of oil into skillet and heat on high heat. Dredge okra in corn flour till coated (shake to remove excess). When oil is hot add okra in small batches not crowding. Fry till golden 30 seconds to 1 minute, then flip pieces over and fry a second more. Place on paper towels.
When okra is ready, pour dressing over salads then top each with even amounts of okra. Serve immediately.
Butterscotch Peach Crisp
Makes 4-6 servings
1 Tbsp. butter, softened
1 cup brown sugar
1 cup flour
1/4 tsp. cinnamon
1/8 tsp.nutmeg
1/4 cup finely diced crystallized ginger
1/2 cup butter
2 cups fresh or frozen sliced peaches,(if frozen, separate) apricots may be substituted.
Preheat oven to 375 degrees. Butter an 8 inch square baking dish.
Combine brown sugar, flour, cinnamon, nutmeg, and ginger.
Cut in butter till mixture resembles coarse crumbs.
Spread fruit in buttered baking dish, sprinkle with crumb mixture.
Bake uncovered 35-40 minutes or till fruit is soft and crumb topping is brown.
Enjoy!
