Recipe(tried): Mickey,Mo's Butterscotch Peach Crisp

Made this for dessert last night and it was really delicious. The crystallized ginger was such a nice touch. I used more peaches, because my DH has a tendency to eat a very large serving!

Butterscotch Peach Crisp
Makes 4-6 servings

1 Tbsp. butter, softened
1 cup brown sugar
1 cup flour
1/4 tsp. cinnamon
1/8 tsp.nutmeg
1/4 cup finely diced crystallized ginger
1/2 cup butter
2 cups fresh or frozen sliced peaches,(if frozen, separate) apricots may be substituted.

Preheat oven to 375 degrees. Butter an 8 inch square baking dish.

Combine brown sugar, flour, cinnamon, nutmeg, and ginger.
Cut in butter till mixture resembles coarse crumbs.

Spread fruit in buttered baking dish, sprinkle with crumb mixture.

Bake uncovered 35-40 minutes or till fruit is soft and crumb topping is brown.
