DOWN SOUTH BARBECUE
2 onions, sliced
4 to 5 pounds pork roast or fresh picnic ham
5 to 6 cloves garlic
2 cups water
1 large onion, chopped
1 (16 ounce) bottle barbecue sauce
Put half the onions in bottom of crock pot then add meat, garlic, and water with remaining onion on top.
Cover and cook 8-12 hours on Low.
Remove bone and fat from meat. Put meat back in crockpot. Add chopped onion and barbecue sauce.
Cover and cook additional 1-3 hours on High or 4-8 hours on Low, stirring two or three times.
Serve from crockpot on large buns.
Cynthia's Notes: I usually use on average 8-9 LB Pork Roast. I increase the onions sliced to three instead of two. 3 cups of water and about 10 cloves. Then on the second half of cooking, I add 2 (16-ounce) Hickory Smoked Barbecue Sauce. and add 2 large onions chopped. This fills the pot just about to the top. I make dinner from it first and then freeze enough for two more meals. I'm using 6 quart crock pot. As I put the meat back in the crock pot the second time, I pull the meat apart in shreds to make better barbecue.
