To make breadcrumbs from scratch you simply take some bread and place it in a blender or food processor on high speed and presto! Crumbs! The fresher the bread, the softer the texture of the crumbs will be. Hard/stale Italian Bread will most closely resemble the store bought kind. My mom used to dry out her bread in the oven to make dryer crumbs, but I've used the soft crumbs in recipes with good results. Good luck! And it isn't a silly question at all! :) In fact I only just recently tried the fresh bread for crumbs after seeing a chef do so on a cooking program.
