12 Breakfast and Lunch Recipes

1 1/2 cups chopped pecans
1/2 cup praline liqueur
2 sticks butter
1 1/4 cups packed dark brown sugar
3/4 cup granulated sugar
1 tablespoon vanilla
4 large eggs
1/2 teasp. salt
4 1/2 cups Bisquick baking mix
1 teasp. cinnamon
1/4 teasp. nutmeg
1/4 cup milk
Soak nuts in praline liqueur
Set aside. Beat eggs and sugars. Stir in melted butter and all remaining ingredients. Blend well and divide between two well greased loaf pans. Bake in a preheated oven 300* for 1 hour and 15 min. Let cool before slicing.
Make a glaze with confectioner's sugar and milk. Drizzle over loaves and sprinkle with more chopped pecans if desired.

3/4 cup margarine
1 cup packed dark brown sugar
1 large egg -- beaten
1/2 teaspoon salt
2 mashed bananas*
1 teaspoon vanilla extract
1/2 cup creamy peanut butter
4 cups rolled oats
* Choose ripe bananas that have some dark brown flecks on the peel. Use enough to make about 1 cup mashed.
Cream the margarine and brown sugar until light and fluffy.
Add the beaten egg, salt, bananas, vanilla and peanut butter.
Beat until very well mixed.
Stir in the oats and blend thoroughly.
Grease a 13 x 9 x 2-inch pan.
Spread the mixture evenly in pan.
Bake in a preheated 350-degree oven for 50-60 minutes or until a toothpick inserted in center comes out clean.
Cool slightly, then cut into bars of about 1 x 2 inches.
Yield: about 4 dozen bars.

Makes: 18
This is an extremely easy and versatile meat pie. Use the hamburger meat in this recipe or use COOKED chopped beef roast or COOKED and chopped chicken in filling. Salt is to be divided between pastry and filling.
1 1/2 cups ground round
1 whole onion -- chopped
1 cup mushrooms
3 tablespoons margarine -- solid
1 1/2 cups sour cream
1 dash nutmeg
1 1/2 teaspoons salt
1/4 teaspoon black pepper
2 cups all-purpose flour
1 tablespoon sugar
1/2 cup shortening
1 egg
Melt margarine in skillet. Saute the mushrooms, onions and lean ground round until lightly browned. Remove from heat and stir in 1/2 cup sour cream, 1/2 teaspoon salt, black pepper and dash of nutmeg or allspice if desired. Set aside.
Mix the flour, remaining salt and the sugar in a bowl. Cut the shortening in until mixture is crumbly. Mix egg yolk with remaining sour cream; add to flour mixture and mix well.
Roll dough on floured surface and cut into 18 circles. Use a sour cream carton for circle size guide or any other cutter that will give you about 18 circles. Place 1 heaping teaspoon filling in center of each circle. Fold over and seal edges, pressing with a fork dipped in flour. Mix egg whites with 1 tablespoon water; brush over pies. Add a few sprinkles of sesame seed or celery seed at this point if desired.
Bake in a preheated 400-degree oven for 15-20 minutes or until golden brown. Serve immediately. When rewarming these, do so slowly so sour cream will not curdle. Best warmed in oven.

1 pound ground turkey
1 large onion -- chopped
1 large green pepper -- chopped
2 whole chiles serranos (optional) -- minced
1 clove garlic -- minced
1 can refried beans
1 can chiles
3/4 cup picante sauce
1 teaspoon ground cumin
1/2 teaspoon oregano
1 teaspoon salt
1 dash cayenne
1 cup Monterey jack cheese -- shredded
8 whole flour tortillas
Optional additions: black beans, corn, more chiles, rice, whatever you like.
Brown the turkey with onion, peppers and garlic. Drain excess fat.
Add the remaining ingredients and simmer about 10 minutes.
Let cool a bit so the mixture is a little firmer.
Warm the tortillas in the microwave or individually in a frying pan to soften.
Put a big spoonful in the center of each tortilla.
Top with some cheese, and wrap, folding the ends within.

The kids might not eat oatmeal, but they'll always eat these for breakfast -- or any time of day.
1 cup applesauce (unsweetened)
2 cups oats
1/4 cup oil
2 teaspoons cinnamon
1 teaspoon vanilla
1/2 cup raisins
1/2 cup sugar
Preheat oven to 350.
Combine all ingredients.
Place tablespoon-sized mounds on ungreased cookie sheets.
Bake 15-20 minutes.
Turn and flatten halfway through baking.

So-called because (note the ingredients) they are a meal in themselves.
This is your cookie base. Blend until smooth:
3/4 cup oil
2/3 cup honey
3 or 4 large apples, peeled or unpeeled, cored and chopped
2 tsp. vanilla and/or small wedge lemon
Mix in:
3 cups oatmeal flakes
1 cup sunflower seeds
1 cup raisins or chopped dates
Let stand for 1/2 hour to let the oatmeal soak in the flavors.
Drop by spoonful onto the drying trays, and dry until firm. Texture
can be according to your preference. The cookies should store well,
if you can keep your fingers off 'em long enough to save a few!
What, no sunflower seeds? Peanut butter does or other nuts
wonderfully well as a substitute. The cooky base also makes a
delicious fruit-salad topping with maybe some sesame cracker crumbles
on top.
Christy.AZ (11:35:49) : For lunch, I like to make vegetable dishes beforehand (usually on the weekend), and just scoop some into a microwavable container. My favorite is two vegetables and a plum. People without low blood sugar could add crackers or a biscuit. I find that vegetables for lunch give me more energy for the rest of the day than, say, a hamburger.

1 lb. ground beef
1 1/2 cup lentils, rinsed
1 cup EACH chopped carrots, celery, and onions
3 cups water
salt and pepper
2 beef bouillon cubes
1 46oz can V8 juice
1 can mushrooms, drained
a dash Worcestershire
Brown beef put in big pot with a lid add remaining ingredients cook on high till it boils, then reduce heat and simmer, covered till lentils are done (1 1/2 to 2 hours)

1-large can of tomatoes in juice, crush them, plus more water, or in puree if you want it more tomato-ey
2-small cans chicken stock
olive or canola oil for sauteing
onions
garlic
2- large ribs sliced celery
1- large green pepper, chopped
jalepeno or red pepper flakes to taste for heat
1-large carrot, chopped
1-cup corn
smoked sausage, quartered and sliced.....I use the turkey variety
(another time try using use smoked tofu or white beans if you like)
2-cups rice...white or brown...even some wild
1-2 cups okra...if you saute it first till golden, it won't be slimy!!!
then deglaze the pan with the juice of one lemon and 1-Tbsp white vinegar. Set aside, add at the end with the cooked greens and cooked rice.
bay leaf
thyme
4- dashes of cloves
salt and pepper to taste
1-heaping tsp. of cajun/creole blend seasonings
escarole...spinach, Swiss chard or Chinese (Napa) cabbage
1-yellow squash quartered and sliced, add near the end
Worcestershire sauce to taste
more lemon if desired
fresh parsley if you wish
calliope,.NY (09:50:44) : Here's another idea, this time for breakfast....or lunch. If you hate to function in the morning, night before, toast a bagel half, allow it to cool completely, shmear it will cream cheese of choice, including the ones they have now that already have some smoked salmon in them, sprinkle with dill weed, place a paper-thin slice of red onion on and top with a slice of beautiful red, ripe tomato, salt and pepper to taste and wrap with plastic wrap to pull out for the morning and take it with you. By the time you get where you are going, it won't be so cold any longer...but of course don't let it sit too long for safety's sake without refrigeration!!!

1 cup (very strong) coffee,
cold and black
1 cup granulated sugar
2 eggs
1 cup plain yogurt
2 & 1/2 cups all-purpose flour
2 tsp. double-acting baking powder
Preheat oven to 400 degrees F; prepare muffin pans.
Put the first four ingredients into a bowl & mix well.
Add the dry mix to the wet mix until just combined.
Spoon into pans & bake for 15-20 minutes.
Serve warm with a hot cup of COFFEE!
Yield: about 15 muffins
calliope,.NY (09:20:07) : I think a nice idea for a lunch to take with you when you are unsure of the conditions would be a cold marinated multi-bean and potato salad. Filling, with good protein, will taste better at room temperature anyway and you don't have to worry about refrigeration for several hours or whether there is a microwave available!
