Recipe: Breakfast Cookies

3/4 cup whole wheat flour
3/4 cup all-purpose flour
1 teaspoon baking powder
1 /2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons grated orange peel
1 cup raisins
1 cup bran flakes cereal
1 /2 cup untoasted wheat bran*
1/4 cup orange juice
1 egg, beaten
1/4 cup vegetable oil
1/4 cup unsweetened applesauce
1/2 cup honey
1/3 cup nonfat dry milk powder
Preheat oven to 350F. Grease cookie sheets.
In large bowl, combine whole wheat flour, all-purpose flour, baking powder, soda, salt, orange peel and raisins.
In small bowl, combine cereal, bran, orange juice, egg, oil, applesauce, honey, and dry milk powder; blend well. Stir into flour mixture; mix well. Drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.
Bake 12 to 13 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.
*This type of bran is also known as Miller's Bran.
Variation: Add 1/4 cup chopped nuts with the dry ingredients.
Makes about 3 1/2 dozen
