Recipe(tried): Brunch Casserole
Breakfast and BrunchI've made this millions of times, and it's good every time, and VERY easy. The kids all love it too.
BRUNCH CASSEROLE
1 (2 lb) bag tater tots, still frozen
1/2 pound bacon, fried and crumbled
or 1/2 lb crumbled fried sausage
or 1/2 lb cooked cubed ham
or 1/2 lb diced smoked sausage
salt and pepper
a dash of garlic powder
1 small onion diced or 1/4 tsp onion powder
8 eggs, beaten
2 cups milk
1 to 2 cups shredded cheddar or other cheese your family likes
Preheat oven to 375 degrees F. Grease a 13x9-inch baking pan.
Add the 2 lbs of frozen tater tots to the pan; apread out. Add your choice of meats, mix it in with the tater tots. Sprinkle with salt and pepper lightly, and sprinkle very very lightly with the garlic powder, sprinkle the onion powder or onion on too. Mix slightly with hands or a fork.
Mix together the eggs and milk in a bowl. Pour over the other ingredients in the casserole. Sprinkle with cheese.
Bake in preheated 375 degree oven approximately 45 minutes, until browned and when you shake/tilt the pan, you don't see the eggs moving.
It reheats well in the microwave, and freezes well too. And it goes from freezer to microwave well.
VARIATIONS:
- If you want it to look fancy, add some parsley on top before baking.
- You can also add chopped green pepper, mushrooms, olives, pimentos, anything your family enjoys, or use several of the kinds of meats together. It's good however you make it!
Makes about 8 large servings
