Recipe(tried): Butterless, Eggless, Milkless Cake

Luanne, this is the name of a cake that comes from a very old "depression era" cake--in our family we call it Depression Cake. It is rather heavy, but is tasty and is a treat if anyone has difficulty having desserts because of of allergies.

1 c. brown sugar, firmly packed
1 1/4 c. water
1/3 c. shortening
2/3 c. raisins
1/2 tsp. nutmeg
2 tsp. cinnamon
1/2 tsp. cloves
1 tsp. salt
1 tsp. baking soda
2 tsp. water
2 c. flour
1 tsp. baking powder

Boil brown sugar, 1 1/4 c. water, shortening, raisins and spices together for 3 min. Cool. Add salt and baking soda which has been dissolved in 2 tsp. water. Gradually add the flour and baking powder, beating smooth after each addition. Bake in a greased and floured 8x8 pan in a 325 oven until done. Needs no frosting, although it looks rather nice with powdered sugar on top.

I've wondered what it would be like to use craisins or perhaps dried apricots or other dried fruits in this recipe, but have never experimented. Perhaps you could try these other fruits too.
