Name: Spice Cake

Comments: This cake is wonderfully moist. You won't believe that it is low fat. Add fat if you use eggs, depending upon the kind you use. It is soooo good-wanted to share it with my baker friends!

Ingredients:
2-1/2 Cups all-purpose flour
6 tablespoons cornstarch
2 tsp baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
1/2 tsp salt
1-1/2 Cups dark brown sugar
1/2 cup light corn syrup
2 teaspoons vanilla extract
2 tablespoons lemon juice
2 teaspoons Energe-egg replacer + 4 oz applejuice
1 cup unsweetened applesauce
4 ounces water
non-stick cooking spray

Glaze:
2 teaspoons lemon juice
1 cup powdered sugar
1 cup light, sugar free, vanilla non-fat yogurt
Instructions: Pre-heat oven to 350 degrees. Sift all dry ingredients, exept Energe-egg replace, together. Mix Energe with apple juice. Mix all wet ingredients well. Spray non-stick coating in a 9x13 pan. Mix wet with dry and pour in pan. Cook for 45 minutes or until toothpick comes out clean. In the meantime, mix glaze and set aside. When cake is done, poke holes in the top with toothpick all over. Spoon glaze over top as it cools until all the glaze is used-go down the sides too.

PS!!!!!! Egg substitute is egg-whites and is not safe for egg-allergies! egg replacer is safe
