About the chocolate version...If your going to use chocolate squares...you need to mix all the filling ingredients and the melted chocolate squares together over low low low heat in a double boiler...just until the chocolate incorporates good and not a second longer...Common sense should have told me that warm melted chocolate would never melt good in cold eggs...DUH!...So melt the chocolate first then pour in with the egg/ buttermilk mixture in the boiler and stir until it just stays melted...to long and the eggs will cook...and don't leave it just keep stirring it...also you need to use about 4 more squares of chocolate than I originally recommended...or you could just use 3-4 tablespoons of cocoa powder...
